I found a recipe for GF puff pastry. It is pretty tasteless but i can see the potential.

next time i will make it like i used to make puff pastry with egg yolk & lemon juice as well. but it puffs & makes decent pies!!!

the recipe def worked but it was a bit tastless. so when i go shopping next payday, i will try to refine it. i did think as i was mixing up the dough bit which was just flours, water, gums & salt that it could be tasteless. the other thing i found was it needed more than 3/4c of water. i sort of guesstimated how much over but i will try to measure it next time & report back. i used buckwheat instead of millet as i couldnt get any millet. & i used straight white rice flour instead of the superfine stuff as i couldnt get that either.

attempt 2, i added one egg yolk & the juice of half a lemon to the flour block & then mixed in enuf water to make a dough. it puffed & had alot more flavour.

this is just what we are looking for. my dd is the gf "pastry chef" in our house and we were just talking about puff pastry......
going to try this out too :)

except for the fact i really dont wanna get into doing grains, i think this would make croissants as well. if you put yeast in the flour block & let it rise. i am sure it is the gum stuff which holds it together as well so dont miss out that. altho i guess you could use gelatin. could be something to experiment with.
