A fennel bulb has been delivered in my organic vegie box and I have no idea what to do with it! pretty ignorant huh? I've done a little google search for recipes but most call for fennel seeds?

would you slice it up and have it in a stirfry?

Original recipe: Apple fennel mashed potatoes:

1/2 cup chopped thick-sliced lean bacon
1 fennel bulb, trimmed, cored and cut into large dice.
3 potatoes, peeled and cut into dice.
1 cooking apple like a granny smith, peeled and choped.
1 tbs rosemary leaves chopped (I don't like rosemary)
I cup apple cider
1/4 to 1/2 cup cream.
1 tsp unsalted butter,
2 green onions chopped (spring)
salt and pepter to taste.

Large saucepan med-high heat.
backon, cook 2 mins, drain fat.
Add fennel, cook 2 minutes.
Add potato dice, cook 1 minut.
Add apples, rosemary, 3 1/2 cups water and apple cider and bring to boil.
REduce heat to medium and cook uncovered until the potatoes are tender about 35 minutes.
drain off excess water. Add cream and cook 5 mins.

Mash.

I don't do this this way. I steam the potatoes first, add 1/2 cup cider, cook 5 minutes, or utnil it's drying... and then mash, and add cream until I get the texture I want, and salt and pepper.

By tweaking this recipe, it can be used for a topping for a shepherd's pie.

just got a couple of al brown cookbooks which are unreal. there is a recipe in stoked for T-Bone steaks wiith caramelised fennel, crisp potatoes and white romanesco. the caramelised fennel and crisp potatoes ( paraphrasing here ) you basically heat up the pan, throw in the sliced fennel which you have tossed with some salt and pepper and oil prior in a salad bowl. Fry one side without turning until golden and turn and do the other side. when soft and caramelised. take out and put aside. do the same with the potatoes. mix both together with EVO and chopped parsley and serve on steak. I would tweak it a bit once i worked out how it all cooked but that is the gist of it.

I'm very pleased to report that I made the apple fennel mashed potatoes to top a fish pie and it was delicious - even the kids liked it!

I had lots of fun experimenting with fennel and found it goes great in vege mashes, soups and stir frys. I particularly liked doing a cauli & fennel mash, and doing asain flavour soup or stir fry with 5 spice & ginger. But roasting turned it into inedible stiff cardboard so I don't reccomend that.

But roasting turned it into inedible stiff cardboard so I don't reccomend that. the times i have roasted it, it has turned out real nice and caramelley. gonna try cauliflower and fennel mash next time i see some in the shops.
